POTATO CAKES FROM SMALL BOURBON DISHES 

  • 350g cooked potato pulp
  • 150 g butter
  • 200 g flour
  • 200 g of goat's cheese
  • 6 g of fine salt

In a mixer (or by hand for the brave) mix with the leaf the potato pulp, the flour, the crumbled goat cheese log and the salt.
Leave to rest and soften the butter during this time. Always fold the butter into the rest of the dough.
Remove your galette dough on a well-floured work surface and make 2 rounds as for puff pastry, leave to rest for 15 minutes and make two new rounds.
Roll out the dough to about 5mm and cut into squares according to your preferences. Put your squares on a baking sheet and brown with egg yolk.
You can grate a little dry goat cheese on it according to taste. Put in the oven at 180° for about 15 minutes. Serve warm. You can freeze the raw patties and bake them while still frozen.
